    • Fish Fillets
    • potatoes
    • Tomatoes

    • garlic cloves
    • Lemon wedges
    • olive oil
    • Dried Oregano

STEP 1:

The first step requires you to preheat the oven at about 200 degrees celsius.

STEP 2:

Take a roasting pan and in that in that add the following:

    • Olive Oil ( As you find necessary to be required for the sauteing)*
    • Potatoes
    • Onions
    • Garlic
    • Oregano
    • Salt
    • Pepper

STEP 3:

Once added, then make sure that you are mixing all the wedges with the seasonings in a nice way.

STEP 4:

Now, place the pan of the roasted wedges in the oven and make it to get roasted for about 15 to 20 minutes. Make sure that you keep on giving everything a turn. It will ensure that none of the wedges is getting burnt, overcooked, or even undercooked.

Step 5:

At this step, add the wedges of the tomatoes and the lemon. These are added at the end because the tomatoes are juicy and watery and they tend to release the water while getting cooked. So when you pass them, make sure you are not turning them for about 10 minutes.

STEP 6:

Now, here comes the last step in which you have to add the fish on top of the roasted vegetables and keep on roasting it for about 10 minutes.

STEP 7:

Do not serve it without garnishing. Make sure that you are adding the finely chopped parsley and the coriander at the end of the dish, It will give a refreshing flavor. Also, always serve it hot.

TIP

Do not use tender fish. Make sure you are using the firm fish like the following;

Cod

Tilapia

Snapper

Basa

Catfish

Advantageous point

If you want to pan-roast the fish, then you can surely do that. Make sure you are not roasting for more than 3 to 4 minutes. Otherwise, the dish starts losing its authentic flavor.
